Blackberry Cobbler

Something as simple as a bowl of blackberries and a few other ingredients can make a delightful dessert. . .

Nothing is more homey than fresh, hot cobbler straight from the oven. Steaming blackberries with a hint of cinnamon – all underneath a blanket of warm dough.Slabs of cold, creamy vanilla ice cream slowly melting on the side, this is truly a simple, yet decadent dessert.

I made blackberry cobbler late at night a week ago. I served it hot, straight from the oven. (I couldn’t wait.) Dishing out the blazing cobbler with the rapidly-melting green tea ice cream, I felt a sense of joy. This cobbler made me feel so relaxed and comfortable. It was pure comfort food. The whole cobbler was gone the next day. Nothing was left but dark, purple stains.

My dad happened to love it, so he requested I make another batch. I did, and this was just yesterday. I took photos and this is the recipe. Amusez-vous!

Ingredients: 

Berry filling:

2 cups blackberries, rinsed clean and patted dry

1/3 cup sugar (you can add more or less depending on your sweet tooth)

1 Tbsp lemon juice

3/4 teaspoon cinnamon

1 1/2 Tbsp all-purpose flour
Topping:

3 Tbsp sugar

1 cup all-purpose flour

1 1/2 teaspoon baking powder

pinch of teaspoon salt

3 Tbsp butter

1/4 cup milk

1 egg

Directions: 


1 Place berries, sugar,cinnamon, lemon juice, and cornstarch in a casserole dish. Stir to coat the berries evenly with the sugar. Let sit for 15 minutes.

2 Preheat oven to 350°F. In a medium sized bowl, mix together 3 tablespoons of sugar, the flour, baking powder, and salt. Cut the butter in and mix until the mixture resembles coarse crumbs. Use a spoon to stir in the egg and milk until the batter is just moistened. *It’ll get sticky, so get ready!*

3 Taking large spoonfuls, drop the batter mixture over the berries. Spread around to fill in big gaps. Place in the oven and bake for 30 minutes or until the berry mixture is bubbly and the topping is nicely browned. Voila!
